Sweet Pepper PieFor Hungry Gamers!
Simple and Delicious!
Cook quartered potatos in boiling water with 1/4 tsp salt
Meanwhile heat olive oil in medium sauce pan
Chop peppers and onion then add to pan and fry for 5 minutes
Add to vegetables 1 tsp instant vegetable stock and 200ml water
Bring briefly to the boil then add 1 tbsp cream, mustard, tomato paste, salt and pepper and tie with sauce tie
Cook on medium heat for another 10 minutes
Meanwhile pre-heat fan oven to 180°C (356°F)
Once potatos are well done pour into sieve and put drained off potatos back into the cooking pot
Add 1 tbsp cream, 1/4 tsp salt and pinch of ground nutmeg then mash until creamy
Evenly spread mashed potatos into a round heatproof baking dish
Pour the pepper onion sauce over the mashed potatos and sprinkle diced Feta cheese on top
Place into oven and bake for 15 minutes
Place on heat-proof plate and sprinkle with chopped parsley.

- 400gr potatos
- 200gr Feta cheese
- 2 bell peppers
- 1 onion
- 200ml water
- 1 tsp instant vegetable stock
- 2 tbsp cream
- 1 tsp tomato paste
- 1 tsp mustard
- 1 tbsp sauce tie
- 1 tbsp olive oil
- 1/4 tsp ground pepper
- 1/2 tsp salt
- pinch of ground nutmeg
- 1 tbsp chopped parsley
